Southwest Sedona
Breakfast Burritos
- 6 - 10 inch Flour Tortillas
Warm in microwave so they are easy to roll
- 6 eggs - scrambled (Farm Fresh are best)
- 1 large ripe red tomato - chopped into dices
- 1/2 Onion - chopped into dices
- 1 Poblemo Pepper - chopped into dices
- 1 Cup Monterey Jack Cheese
- 6 Cooked Bacon strips
- dash cayenne
- dash of cilantro
Cook tomato,pepper and onion and spices together in butter for 2 minutes in a medium skillet. Add to cooked scrambled eggs and bacon.
Add 1/2 of cheese into mixture.
Fill each flour tortilla with mixture and roll. Place on plate witha sprinkle of cheese. Serve with salsa, hash browns, sliced avacado and fruit.
